There were no threads here, so thought I'd start things off.
Most people who have played this are aware of the obvious players that turn out to be really good - Shadow or Saggy come to mind - so are there any players people have scouted or recruited that are surprisingly good yet often overlooked? Post about them here.
I'll start things off by saying that Billy Nomates is a surprisingly solid goalkeeper considering you run into him in random battles. Of course, for the most part you'll never need a keeper other than Mark, but he's worth a look for the matches that make you use a specific element.

Strangely enough I managed to complete the game without scouting anyone. But I did scout King from Royal after completion just because I like him. I did find that my team could function perfectly with only Mark, Axel, Nathan, Jude and Kevin (man I hate the dub names!!) and everyone else were just making up the numbers.
Ace Server isn't too bad from the Tennis team though (especially if you put him in MF instead of his GK position).

I've been reluctant to try the matches with specific element requirements, because I also completed the story without scouting and now any scout characters are far below Mark and the gang in terms of level. I like Paul Peabody as a keeper though!

So far I've only done the element match where your team has to be entirely air, and they're pretty kind to you; most of the opposing team is in the 30s, level-wise, and only one player is level 40 (George Winters), so you won't have to grind too much or you can just recruit from Zeus or something. My air goalkeeper was awful and luckily I never ended up having to save anything.
Ishido, feel free to use the Japanese names for the main cast, haha. I mean, if you're telling us a good player to scout then give the English name obviously so we can look them up but I'm sure everyone knows who Gouenji is, for example.

Ah okay, I may give that a shot then. I've been really frustrated recently with trying to S-Rank Zeus, so I haven't even given any thought to the other matches.
And yeah I'm also fine with Japanese names. I was thinking of creating a guide with all the character names in Japanese and the corresponding dub name, so people don't have to worry about which they use. I'll do that after work tonight. :]

I must admit, I never tried doing the element matches as I went straight onto game 2 after completing the first game (too desperate to see the Dark Emperor's match ^^; Do you ask Natsumi/Nelly to do them?
And Hasty Exit, I wouldn't know the original names of all the scoutable players who aren't the main cast or part of the major teams in the story anyway since they're game exclusive (and I have the English version of this game). Heck, there's so many characters in the anime that, despite seeing all the episodes, I don't even know all their names!!

ishido: Ahh, fair enough. And the element matches show up after you beat Zeus. If you go up to the headmaster's office and talk to Nelly's dad, he's got new competition routes for you to try. I won't spoil the whole list of teams you face, but a few examples are the aforementioned elemental matches (your entire team has to be one element, their entire team is the element strong against yours), a match against "Benchers" which consists of players from opposing teams that are always on the bench, and "Old Kirkwood" which is basically Kirkwood when it still had Axel.
underredskies: I think I got lucky with Zeus, I S-ranked them my first try and since then I've never gotten above 4 goals against them. The name list's a good idea, too; I haven't watched the anime and although I'm familiar with most of the main character's names, occasionally I'll see one and go "who?"
On-topic, I just scouted a guy called Mach who's pretty good. Your team level has to be really high to get him though.

There is a somewhat decent player that I scouted once by the name of Neptune. You can only get him with team-level Maximum (which equals 60, don't know which makes it increase, by the way). His stats are nothing too special, but he is a good allrounder with some fairly good techniques. And he starts around level 30 or 40, if I remember correctly.
Unfortunately, since I cannot play the game until March, I can't look for other good scouts on my bench. If it is a question about good enemy players, however...than the best one in my eyes is Samford/Sakuma. In IE1, a game with decently trained Gouenji, Sakuma and Saggy is won already.

I've just added Samford to my team for the element matches, I'll need to get training him.

Just give him a good wood defensive ability (I gave him Spider trap), this is the only thing that he is lacking. I want all of my players to be able to dribble and to defend. It is especially devastating because most defenders have no good dribble abilities. Means more shoots in a shorter time. Honestly, Wood was the easiest one, with Sakuma, Someoka, Ichinose, Domon and Saggy.
For the element matches you normally only need 5-6 decent players that need to sit in the right positions; 2 of which should be able to score (at least sometimes). This is the reason why the Earth match was so difficult for me (only Raimon scouts as forwards...). The ball should be in their half 90% of the time anyways, so defenders are not so important.
I scouted a few other players, too, but unfortunately I won't see the game again for another 4 weeks. So I can only try to remember. I liked the Farm Defenders (pretty much all of them), the triplets (although you need to teach the best one, the oldest one, a few low-cost techniques, or else he will burn TP) and especially this one friend of Domon and Ichinose from America (in the anime). From Zeus, everyone is good, I got myself Dionysos and Hera as well as Ares (for my bench). And as I read on this Japanese wiki, the fire Forward from this Ninja school learns a good fire shoot. As well as having above-average stats.

As ddlan pointed out, the all-earth team is somewhat tricky due to the fact that very few of the players you start the game with are Earth element. So hey, I figured I'd post my all-earth team:
Vellosum Medusa Demi Boomer Gammy Spike Breaker Ambie Horne Jack Mark
Subs: Tinney, Nesiac, Wordsy, Gaunt, Burns
Not all of these were scouted (Jack and Mark obviously weren't) and not all are good (Gaunt seems pretty terrible, I mostly used him to fill the space), but I managed to get the S rank with this team. I'd like to particularly recommend Demi, who I think is on the connection map; the game lists him as a defender but he works best as a forward, since he learns two shots, one of which is Clone Shot.

I just looked up the teams of the Football Frontier. Here are the players that I scouted:
Kirkwood: The triplets and their flame defender. He has really good stats all around. Unfortunately I onl did it recently (in play time), so he is far behind in levels compared to my other players.
Brainwash: I had their goalie at the bench for a while (always have one, just because you have in a normal footbal match), but he is not that good when you level up to your 30's.
Occult: Their Captain, Talisman. He is weak, though, as soon as you reach level 20. He was only benched in the wood match (due to Dragonfly, Samford and Saggy).
Farm: All their defenders are godlike, especially the ones with their special defense. I also like their goalie. More than Endou. If only his level was higher...
Zeus: Everybody is great, but Demeter, Hera and Dionysos are gods. The others have either no techs, no KP/TP or no stats. I also have Athena.
Royal: Samford. Divine Arrow AND Emperor Penguin makes him one of the best strikers. His only weak point is his defensive ability with this abnormally high foul rate. I think Master is good, too, as well as King. I also have Waldo, just because of his Death Zone.
Shuriken: I only scouted Code. He is not very good stat-wise but has interesting abilities. He was great to have in my Earth match (and is the reason why I wrote this list. Earth is really complicated.) If I had known that Cloak has Kazemaru's Fire Shot I would have also scouted him. A third great fire attacker would always be welcome.

I found Marv Errick accidentally, and he's actually really good- not many people know about him though.
About the earth team, here was mine.
GK- Mark DF-Jack, Boomer, Ches Nut cracker (he's supposed to be a goalie but he's a better defender.) Drent (royal) MF-Code (shuriken), medusa, tailor FW- tyler murdock, achilles

I scouted Shadow at the start of the game, and he's one of my best strikers. Nev Erin is quite good, but the difference in TP & FP is annoying. One of my best mids is Wolfy from Occult as he is good for tackles and lots of move 'failures' occur. I also user Riser as a defender as he has Hurricane Arrows.
